Odile Chatelain has been making chocolate for as long as she can remember. Growing up near Paris, France, Odile fondly recalls making truffles every Christmas with her mother. The original chocolate ganache recipe from her childhood has evolved over the years into twenty-four exquisite and unique truffles. Each are inspired by flavors from around the world. Curious? Just ask Odile, she is more than happy to tell you the story behind each one.
Odile works with exotic spices and natural ingredients to create fascinating flavor combinations. Each truffle is made in house with the finest quality organic ingredients. Feel good about your chocolate choice, as Odile works exclusively with high quality and fair trade dark chocolate to make her delicious and unique works of art. And she hasn't forgotten about those with diet restrictions. All of Odile’s truffles are gluten, flour, and egg free. Be sure to strut your patriotism and try the Canadiana series featuring truffles infused with ice wine, wild-rose syrup, black walnut, dark maple syrup, wild trumpet mushrooms and raspberry vinegar.
